Coconut Curry Chicken Thai Soup is the perfect dish for when you want some soup that is pretty quick to whip up. It is all made in one pot so get a break when it comes to the dishes!

I am a soup loving kind of girl. I can eat it year round but I definitely start to crave it once the weather gets colder. I love that it fills like it is warming up my soul. There are so many different types of soup you could pretty much eat it every day and have something different each and every time. Once you try this Coconut Curry Chicken Thai Soup you will definitely want to add it to your meal rotation.

Coconut Curry Chicken Thai Soup

  • 2 T. extra virgin olive oil
  • 3 tablespoons fresh cilantro, chopped
  • 2 cups baby spinach
  • 1 small yellow onion, diced
  • 1 large lime, cut into thin half round slices
  • 3-4 garlic cloves, minced
  • 1 medium yellow bell pepper, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 lb. boneless skinless chicken breast, cubed
  • 1½ t. ground coriander
  • Sea salt and black pepper, to taste
  • 1 1-inch ginger piece, peeled and minced
  • 3 tablespoons Thai red curry paste
  • 1 14-oz. can full-fat coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup

Directions:

    1. Over medium heat, heat the olive oil in a large skillet with high sides. Once the oil starts to heat up, add the onion. Cook it for around 4-5 minutes until it is tender.
    2. Add the chicken and cook it for 5 minutes or starts to get a little color. Season the chicken with salt and pepper according to your tastes.
    3. Next add the ginger, red curry paste, coriander and garlic. Cook for 1-2 minutes or until the spices become fragrant.
    4. Remove from heat and immediately serve topped with fresh cilantro and lime slices.

Can I Freeze Coconut Curry Chicken Thai Soup?

No you can’t. Soup can be very freezer friendly. Unfortunately when a soup is made with regular milk, almond milk or coconut milk will separate when it is frozen and later thawed out.

Can I Substitute Any Ingredients Or Add More?

Absolutely! One of the best parts of cooking is tweaking it to make it your own. If you are not a fan of spinach, try using kale instead. Minced garlic in a jar will do in a pinch if that is what you have in your pantry. Cumin is a great substitute for coriander since they share the same spicy flavor. Fresh parsley will work if you can’t find any cilantro.

Feel free to add more veggies to the recipe like thinly sliced mushrooms. 1/4 teaspoon of red crushed red pepper flakes are perfect for a little kick!

Leftover rotisserie chicken also tastes good with this soup. I do like to waste food and use up leftovers any way I can. 1 cup of the rotisserie chicken works perfectly.
