I love Anzac biscuits. I came across this recipe in the Super Food Ideas Magazine that was screaming out at me to be converted to be made in the Thermomix. These Thermomix Anzac biscuits are gluten free with added quinoa flakes (so that must make them healthy right?). They were worth making as they made my house smell divine! They were very yummy and even tastier the next day too!

Ingredients
- 60g golden syrup
- 120g butter, cubed
- 70g brown sugar
- 80g quinoa, flakes
- 50g almonds, flaked
- 70g coconut, desiccated
- 150g self raising flour
- 20g hot water
Instructions
- Line 2 baking trays with baking paper. Preheat oven to 180°C/160°C fan forced.
- Place golden syrup and butter into TM bowl and melt 4 mins / 50° / speed 1.
- Add remaining ingredients and combine. Closed lid position / 40 sec / Interval speed.
- Roll into tablespoon sized balls and place 3cm apart on trays. Gently flatten them with a fork.
- Bake for 15mins, rotating the two trays mid way.
- Allow to rest on trays for 5 mins before placing onto a wire rack.

The flakes are made by soaking and steaming the grain. It's then rolled through a mill. You could try cooking the quinoa and letting it dry a little. Leave out the hot water to allow for the extra moisture.

Hi Glenda - yes there is a difference. I think the flakes are processed very differently - similar to rolled oats I think. For this recipe I would only use the flakes.

Good morning, I'm really keen to make these but only have whole quinoa, not the flakes. Can I give them a whizz in the thermomix? Any suggestions appreciated.

Hi Laura - if you blitz whole quinoa you will just get flour. And if you only blitz it a small amount it will be hard and gritty and also quite bitter. I really think it would be best if you bought the flakes.

Hi beautiful thermo fun, I am planning on making these for tomorrow but am not allowed to use any gf flours, could I sub for coconut or almond meal?
