Tortilla pinwheels were a potluck classic growing up in the Midwest. They were a welcome presence at every party and usually had an assortment of sandwich meats and sliced cheeses in them. I could never pass them up.

Easy Healthy Appetizer Recipe

The rainbow version of the Midwest classic is packed with fresh veggies and has a halfway homemade approach (my favorite way to entertain!) by using the store-bought dip to help you cut down on prep time.

Even better, the veggies can be sliced the night before making things even easier. Spreading the dip and arranging the veggies takes just minutes.

This recipe is also a wrap that I can eat for lunch on the go since it’s healthy yet satisfying and doesn’t make a mess or need to be reheated.

My dip of choice for this recipe is La Terra Fina’s Sriracha Three Cheese Dip & Spread. There’s a spicy kick it gives the wraps, and the beautiful red-orange color is all natural – no added dyes or preservatives.

Ingredients

  • 3 12-inch spinach tortilla wraps
  • 10-ounce container of La Terra Fina Sriracha Three Cheese Dip & Spread
  • 1 red pepper, cored and thinly sliced
  • 1 yellow pepper, cored and thinly sliced
  • 12 baby carrots, thinly sliced
  • ¼ red cabbage, thinly sliced
  • 1 cup fresh spinach

Instructions

  1. Divide the dip evenly into three parts and spread a thin layer on one side of each tortilla.
  2. Arrange the prepared veggies in rows on the tortilla (see picture).
  3. Starting at one side, roll the tortilla up over the veggies, pressing it together tightly.
  4. Slice the tortilla into 1-inch slices crosswise.

How far in advance of serving could you put the roll together and store in fridge (would slice right before serving) I am helping with an at home wedding rehearsal dinner, and want to serve one or two lovingly-prepared vegetarian appetizers.       Hi Tibby – I think you could get away with making them the night before but I would actually recommend slicing them then. The reason is I suspect they will start to get a little soggy rolled up and be more mushy when you slice them the next day. Let me know how it goes!

    Hi Kelly. I made these tonight for healthy snacks this week. I didn’t have La Terra Fina at my store. I mixed some organic cream cheese with some sour cream, a tiny bit of milk, lemon juice and cajun spices. They turned out great! I’ve been munching on a few as I made them. Thanks!

      It might be related to the type of dip you are using! Something thicker acts as more of a glue. Alternatively if you have time to let them firm up in the fridge all smooshed together that might help too.

    I couldn’t find the La Terra Fina flavor you used so bought La Terra Fina Mexicali which was the first mistake because it was not of the consistency of glue. And the store also didn’t have spinach tortillas so I used flour. I rolled up tightly and the dip spilled out everywhere. I tried less dip and when I cut them they didn’t hold up together. I tried refrigerating the rolled up tortilla and that helped somewhat but we ended up not taking these to the family picnic. But it looks so good and healthy I’ll try again!

      Oh no! I do hope you’ll give it a second try. Another product that might work is a flavored cream cheese spread. I also like hummus but that can also be a little soft. Good luck!
