Chocolate Amaretto Swirl Fudge Recipe

It would not be the holidays without this delicious Chocolate Amaretto Swirl Fudge Recipe. Brightly colored for a fun presentation and bursting with the flavors of chocolate, vanilla, and almond. A quick and easy treat that is sure to please both family and friends alike.

This is a great recipe at any time of year. Leave out the food coloring for a brown and white fudge. The red food coloring is great for Christmas, New Year’s, and Valentine’s Day. A green food coloring makes this a perfect St. Patrick’s Day or Easter treat. Even orange food coloring for a different Halloween party dessert. This is a very versatile recipe for any occasion!

I sent most of this batch into the local UPS store where we have our mail pick-up. The text message I received said, “This fudge is unbelievably amazing.” And it is. It is also pretty easy to make.

How to Make Chocolate Amaretto Swirl Fudge

1. Prep – Spray a springform pan with non-stick spray and get two double boilers going.
2. Melt the chocolate – At the same time, add the chocolate chips and one cup of the milk to one boiler and the white chips and the rest of the milk to the other boiler. Stir until both are smooth. Add a teaspoon of vanilla to the chocolate and a teaspoon of almond extract to the white chocolate.
3. Color the chocolate – To the white chocolate, add the food coloring and stir well.
4. Combine – Add the chocolate to the bottom of the prepared pan, reserving 4 tablespoons. Add the white chocolate to the top.
5. Swirl – Drizzle the reserved chocolate over the top of the combined fudge then swirl it using a butter knife.
6. Chill – Let the fudge chill for 2 hours or until completely firm.
7. Cut – Once firm, release the pan and slice the fudge recipe on a cutting board. Enjoy!

Tips for making this Chocolate Amaretto Swirl Fudge recipe:

● Double boiler – The only thing you have to watch for is that your chocolates are melting at pretty much the same rate in the double boiler. And please use a double boiler and do not try melting the chocolate in a microwave. The double boiler will prevent burning and hardening, and the microwave… does not.
● Do not overcook – As soon as the chocolate chips melt, add the extract, give it a stir, and get it off that heat. If you don’t, your fudge won’t turn out the best. There’s nothing worse than going through all that hard work in the kitchen only for it to turn out icky.
● Change up the flavor – If you want to give the fudge a different flavor, you can always change the flavor of extract used. For example, flavors like orange, peppermint, hazelnut, birthday cake, etc. would all be delicious choices!
● Use other colors – This fudge is great holidays other than Christmas or St. Valentine’s Day. You can either leave the food coloring out and leave the fudge white, or add other colors to match the occasion. For example, change the top green for St. Patrick’s Day or pastel for Easter.
● Storage – Store in an airtight container in the pantry for up to 5 days. Best if stored in the fridge, in an airtight container, separated by wax paper for up to 2 weeks. It can be stored in the freezer for up to 2 months in the same manner as the fridge storage.
● Reheating – I do not recommend forced reheating on this chocolate fudge recipe. I actually cannot imagine why anyone would want to reheat it.
● Freezing – If you freeze this fudge it is best to let it thaw to an edible temperature naturally.

● If you do not have a double boiler, boil some water in a pot and place the same size pot on top of the pot with the boiling water (it will be a snug fit).

● The other option is a metal bowl on top of a pot of boiling water. Be careful not to burn yourself, and make sure that the metal bowl does not tip over.

Common Questions About Chocolate Amaretto Swirl Fudge

Should Fudge Be Refrigerated?

You do not have to refrigerate fudge as long as it is not kept in an area where it gets overly hot. However, it will last longer if kept in the fridge or freezer. I tend to store it more in the fridge than anywhere because then I do not have to worry about it. It is important to note that the fudge can get sticky when placed in the fridge or freezer, so it is best to separate each layer of fudge with wax paper for easier consumption and handling.

What Happens if You Cook Fudge Too Long?

If you overcook your fudge, it will become pretty hard and tough to eat. It can be crumbly as well and not hold together to make the classic fudge we all know and love. If you undercook it, the fudge will be very soft and you’ll have trouble with it setting up. In general, it’s a good idea to have a candy thermometer handy to help you make the perfect fudge.

Can Old Fudge Make You Sick?

Old fudge can definitely give your tummy a bit of the rumblies, but I’ve never heard of it causing major symptoms. Of course, with any old food, it’s a good idea to toss it and not chance it. You never know when something could cause you to have food poisoning. Nobody wants to deal with that!

FAQs

What is amaretto fudge made of? ›

It's sweetened condensed milk mixed with milk chocolate chips. After they melt together, you add in vanilla extract and two ounces of Amaretto liquor. The extra liquid makes this extra soft and fudgy. I added some toasted almonds on top, to add some crunch and for an extra almond kick.

How do you know when fudge is beaten enough? ›

After letting the fudge cool, it's time to beat it. It is important to stir constantly with a wooden spoon until the mixture starts to thicken and its surface starts to look dull or matte. Now is the time to stop beating and pour the fudge into a mould.

Why is my 3 ingredient fudge not setting? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.

How much should you beat fudge? ›

Once the mixture has cooled enough, use a wooden spoon or an electric hand mixer to beat the fudge until you see the very first signs of the mixture shifting from glossy to matte. Believe yourself when you think you see them! If you over-mix the fudge it will set in your pot.

What is the main ingredient in amaretto? ›

Depending on the brand, it may be made from apricot kernels, bitter almonds, peach stones, or almonds, all of which are natural sources of the benzaldehyde that provides the almond-like flavour of the liqueur. It generally contains 21 to 28 percent alcohol by volume.

What flavor makes amaretto? ›

Amaretto is a sweetened distilled spirit. It gets its character from steeped almonds, apricot pits (which have a distinct almond flavor), peach stones, or a mix of the three. Most producers are secretive about their recipes. But traditionally, the ingredients are steeped for anywhere between a week to several months.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

What should fudge look like after beating? ›

The fudge is then beaten as this makes the fudge slightly crumbly rather than chewy. Beating the mixture encourages the formation of small sugar crystals, which leads to the crumbly texture. The crystals may not be noticeable in themselves but the fudge mixture will thicken and turn from shiny to matte in appearance.

What happens if you over stir fudge? ›

Once the sugar has dissolved and the mixture has come to a boil, do not stir it. If you do, the sugar can crystallize, giving your fudge a gritty texture. As you beat the fudge, pay attention to color and texture. Once the fudge loses its sheen and thickens, put down your spoon.

Can I fix fudge that didn't set? ›

OPTION 3) Sieve together some powdered sugar and cocoa powder, and gradually work this into your unset fudge until it reaches the consistency of dough, then roll out and cut into squares, or shape into balls and then roll in powdered sugar (roll the balls in icing sugar, not yourself).

Can you reboil fudge that hasn't set? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

What can I do with ruined fudge? ›

To fix oily, hard or grainy fudge, scoop the fudge back into a pot with about a cup of water. Cook it over low heat until the fudge dissolves. Then bring the fudge back up to the temperature specified in the recipe and follow the remaining steps. The flavor may be slightly diluted, but the texture will be improved.

When should I stop beating fudge? ›

One of the most difficult steps in making fudge is knowing when to stop beating. Once the candy becomes thick and almost holds its shape when dropped from the spoon, it's time to quickly stir in the nuts and push the mixture into the prepared pan (Step 8).

Can I beat fudge with a mixer? ›

Immediately stir the fudge with the wooden spoon or beat on low speed with an electric mixer. The mixture should seem runny at first. Continue to stir vigorously or beat on low speed until the mixture begins to thicken slightly and loses some of its shine, 18 to 22 minutes.

Is amaretto almond or hazelnut? ›

Amaretto is a fragrant almond flavoured liqueur. Traditionally, the almond flavour and slight bitterness come from oil extracted from bitter apricot kernels. However, sufferers of nut allergies should be aware that some amarettos are now made using almonds.

What is fudge usually made of? ›

Fudge is a dense, rich confection typically made with sugar, milk or cream, butter and chocolate or other flavorings. The base for fudge is boiled until it reaches the soft-ball stage (135 to 140 degrees F), then stirred or beaten as it cools to minimize the formation of sugar crystals.

What's the difference between amaretto and almond flavor? ›

Amaretto vs Almond Extract: Amaretto is known to be the liquor with almond flavor, but it doesn't have a strong or pure flavor like almond extract.

What makes amaretto so sweet? ›

Some recipes do use almonds and others employ a combination of the two. The flavor is often from an extract added to a base liqueur. Some amarettos infuse or distill other botanicals, such as vanilla, into the liqueur. They're often sweetened with dark or burnt sugar and that gives the liqueur its dark amber color.
